Beet pasta recipe - light, fresh summer sauce

We were the first restaurant to mill our own flour in the U.S., and I have been doing this for the last decade. At one point I was hand rolling over 2,000 pieces a day.   • Sorriso Beet Pasta
  • Lemon Juice
  • Fresh tarragon leaves (you have to pick them off the stem)
  • Orange zest
  • Salt and Pepper
  • Olive oil
  • Pine nuts


  • Start by bringing a pot of water to a boil lightly seasoned with salt (should taste like a well-seasoned broth)
  • Boil your Sorriso Beet Pasta for 8-10 min
  • Toast pine nuts in a dry pan over low heat

While the pasta is cooking, prepare the sauce:

  • Crack some fresh black pepper into a pan and toast it with Olive Oil
  • Then use a ladle and add some of the pasta water to the pan so the oil doesn’t get too hot (about 2 oz)
  • Once the pasta is ALMOST done cooking transfer it to the pan with a slotted spoon (Never rinse your pasta and always finish cooking it in the sauce)
  • Always toss the pasta the moment after it gets into the pan to make sure its moving all around and coated by the pepper and the oil.
  • Next squeeze 1/4 of a lemon into the pan and add a handful of tarragon leaves and toss the pasta with a little more olive oil in the pan. Toss the pasta at least 50 times. I used to make my chefs toss is 100 times minimum. This ensures the sauce is emulsified.
  • Taste for seasoning. Add more lemon and tarragon to taste
  • Finish by plating in a bowl and adding fresh orange zest over top and the toasted pine nuts!
